With a 20 month old and a growing business I love easy dinner ideas as much as the next person. I recently put this one together for a client. Nothing groundbreaking here, but delicious and great for any time of the year. You could do these in the oven or on the grill since they are wrapped in foil. Feel free to play with the ingredients too. These would be great with some fresh rosemary and balsamic vinegar topped with a little goat cheese. Yum, I have to try that now. My mouth is watering! I really wish my husband liked vinegar and goat cheese. What's something that you love but never get to make because your significant other won't eat it? I feel like my list is a long one. Tip: If you want the cooking time in the foil to be shorter, boil them for about 5 minutes before putting them in the foil.
Serves 6 as a side dish
3 lbs baby red potatoes
1 Tbsp olive oil
2 tsp dry oregano
2 cloves of garlic
Zest and juice of a lemon
4 oz crumbled feta
1/4 cup parsley leaves
Preheat oven or grill to 425 degrees.
Cut the potatoes in half and place them on a big piece of foil. If the potatoes are larger, cut them into quarters.
Using a microplane or grater, grate the garlic cloves over the potatoes. If you don't have either device, just mince it up small.
Drizzle potatoes with olive oil, sprinkle with oregano and season to taste with salt and pepper. Grate lemon zest over potatoes and squeeze the lemon juice on them as well.
Toss everything all together and then wrap up the sides of the foil to form a foil pouch full of potatoes. Place on a cooking sheet in your oven or place directly on the grill.
You want to cook them until they are starting to get crispy or you can easily pierce them with a fork. Cooking time with very but plan on at least 30 minutes. Stir the potatoes at least once during the cooking process.
If the potatoes aren't getting crispy but they are tender. Open up the foil packet for the last 10 minutes of cooking to help them brown up.
Once they are done open up the packet and top with feta and parsley. Taste and adjust seasoning to suit your personal taste!
