Roasted Tomatillo Ranch Dip with Greek Yogurt

I was recently asked to bring a dip to a friends house for a gathering. When I got to the grocery store they either didn't have what I needed or the produce just didn't look good for the recipes that I wanted to make. Like under ripe avocados. I was not going to serve hard, tasteless avocados. On my way to the store I had started to think about a salad dressing that I could make for a client's salad in the coming week, and a tomatillo ranch came to mind. So I tried it out as a dip. I took my recipe for roasted tomatillo salsa and made that, then combined it with dry ranch mix and Greek Yogurt. The dip was a huge hit and pretty easy to make. It's something with a little more zing and flavor to serve with your veggies then just a plain old ranch dip. Your friends and family will have no problem eating their veggies.

Ingredients 3 large Tomatillos (if you can't find fresh you can generally find them in a can, in the international aisle) 3/4 of a large Onion 2 cloves of Garlic 1 Jalapeno Cilantro 1 Lime 1/2 tsp Cumin 8oz Plain Greek Yogurt 1/2 packet of dry Ranch seasoning mix Instructions Preheat your oven to 400 degrees. Cut the tomatillos in half, quarter the onion and cut the jalapeno in half. Place the tomatillos, onion, garlic and jalapeno on a cookie sheet. You can roast the garlic in the skin and then remove it before putting it in the food processor. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 15-20 minutes, until the vegetables start to brown. Place all of the roasted vegetables into a food processor. If you want it to be less spicy only use half of the jalapeno and/or remove the seeds. Add in the juice from half the lime, 1/4 c fresh cilantro and cumin. Puree until all the large pieces are broken down. Next add your Greek yogurt and ranch seasoning into the food processor and pulse until combined. Taste and season with salt and pepper if needed. If you like more ranch flavor, add the whole packet in. This will make enough dip for 2 bowlfuls. That is it, you are done! Serve it with veggies, chips or use it on top of a salad.
