I know you can eat chicken salad all year, but I always crave it in the summer. The Waldorf chicken salad is a pretty classic style of this dish. I like to put it on an open faced bagel with a good piece of cheese on top and toast it for a chicken salad melt. It is also delicious on some greens as a salad.
If the nuts and fruit aren't your style when it comes to chicken salad give something else try. Avocado and goat cheese with the chicken would be delicious. You could even skip the mayo and greek yogurt if you use these ingredients. Another idea would be some curry powder with the yogurt and some raisins. Just look in your pantry and fridge and see what you have.
Serves 4
Ingredients
2-3 cups of cooked chicken chopped or shredded
1 medium gala apple chopped (unpeeled) Sprinkle with lemon juice so doesn’t brown
1 cup purple grapes, cut in half
½ cup of walnut peicies (you can toast them in a pan on the stove if you wish)
½ cup celery, sliced
¼ cup golden raisens
¾ cup plain greek yogurt
¼ cup of mayonnaise
¼ cup orange juice
Salt
Pepper
Instructions
In a bowl mix together the greek yogurt, orange juice and mayonnaise. Add in the fruit and the chicken. Season to taste with salt and pepper. You can top with poppyseed if you want for a little something extra.
Serve as a sandwich, with greens, or enjoy on a plate.
